  • For the crust:
  • Preheat oven to 35o degrees. Spray a large pie plate with coconut oil cooking spray and set aside.
  • In a small cup, mix together chia seeds and water. Set aside and allow chia seeds to form a gel, around 5 minutes.
  • In a small bowl combine oats, flax, shredded coconut and salt.
  • In another bowl, stir together coconut oil, warm water, agave and chia seed gel.
  • Combine dry ingredients with wet ingredients. Press mixture into the bottom of the pie plate and place in the oven.
  • Bake 25-30 minutes or until lightly golden.
  • For the filling:
  • Melt chocolate chips, stirring continuously.
  • (I used a double boiler, but you can use a saucepan or melt in the microwave)
  • Add all ingredients to a food processor and blend until well combined and “fluffy.”
  • Pour mixture into cooled pie crust and refrigerate until set, around 1 hour.

To kick off my 35th year I’m indulging in this special birthday Banana Split Cream Pie!

I love birthdays…even my own regardless of what age I am turning.  I couldn’t wait to say goodbye to my 20’s and I’m looking forward to my 40’s, so 35 is a perfect place to be for the moment!

To complete a wonderful birthday weekend I made this easy, no-bake dessert…whipped raw cashews, bananas and coconut cream in a graham cracker crust and jazzed up with all the banana split sundae toppings imaginable!  I was so excited to find natural, no dye added maraschino cherries at whole foods!

The graham cracker crust was so simple to make, just crushed graham crackers and melted coconut oil mixed together and pressed into an 8 inch tart pan.  The banana cream filling is from one of my favorite blogs Minimalist Baker.  The pie is smothered with coconut whipped cream, chocolate sauce, bananas, walnuts and finished off in perfect Banana Split fashion with a cherry on top!

Toasted coconut, fresh strawberries and caramel sauce would be great additions too!

Ingredients

  • For the Graham Cracker Crust:
  • 1.5 cups crushed graham crackers
  • 4 tablespoons melted coconut oil
  • For the Banana Cream Filling:
  • cups raw cashews soaked overnight
  • tablespoons coconut oil melted
  • ¼ cup pure maple syrup
  • 1 banana sliced
  • cup full-fat coconut milk
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons lemon juice
  • For the Banana Split Toppings:
  • fresh banana slices
  • chopped walnuts
  • coconut whipped cream or your favorite whipped topping
  • chocolate sauce
  • cherries

Instructions

  • Soak cashews in water overnight or for at least 6 hours
  • Crush graham crackers into a fine powder. I used a food processor and pulsed until the right consistency. Transfer to a medium bowl and stir in melted coconut oil until well combined. Press firmly down into an 8 inch pie plate or tart pan. Place in the freezer to set.
  • Meanwhile, drain cashews and place into a food processor. Add melted coconut oil, maple syrup, banana slices, coconut milk, vanilla and lemon juice. Blend until smooth and creamy scraping down sides as needed. (this may take a few minutes!) Pour into pie crust and use a spatula to smooth. Place back into the freezer for 3-4 hours or until set.
  • Once set, let thaw for a few minutes for easier slicing. Add desired toppings and enjoy 🙂
  • Store in the freezer 🙂

I stashed the leftovers way back in the freezer and selfishly will be enjoying this dessert for days to come, 35 never tasted so good 🙂

Chocolate Peanut Butter Cream Pie

Fluffy, silky and decadent…um, yea!

No bake, few ingredients and simple to make…can it get any easier!?!

Back in the day my best friends and I would go to Friendly’s and get their mega Reese’s Pieces Sundae, remember those???  I can only imagine the ingredients used, I’m sure they were not the healthiest!  Here is something that’s even better tasting, and not so horrible for you!

I used a pre-made chocolate cookie crust…no judging!  Arrowhead Mills makes a vegan graham cracker crust and Mi-Del makes a gluten free chocolate cookie crust. If you want to make your own, it’s simple!  All it takes is a sleeve of graham crackers of your choice, crushed and mixed with a few tablespoons of melted coconut oil or vegan butter.

  • 1 pound block of silken tofu organic, Non-GMO, such as Nasoya
  • cup all natural peanut butter
  • cup pure maple syrup
  • ½ teaspoon pure vanilla extract
  • ½ cup chocolate chips I use Enjoy Life, melted
  • 1 cookie pie crust homemade or pre-made (see recipes below!)
  • For the chocolate drizzle:
  • ½ cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Add tofu, peanut butter, maple syrup and vanilla to a food processor. Blend until whipped and creamy.
  • Melt chocolate chips in a double boiler or microwave. Add melted chocolate to food processor and blend until well combined.
  • Pour mixture into pie crust and place in refrigerator for 2-3 hours or until chilled.
  • For chocolate drizzle sauce:
  • Melt chocolate and coconut oil in a double boiler or microwave.
  • Serve pie with chocolate drizzle (optional, but well recommended) 🙂

Two of my favorite superfoods, sweet potatoes and raw cacao whipped together to make a delicious treat!

This one passed by all my testers, young and old!

Not only does this scrumptious dessert satisfy a sweet tooth, it will leave your skin glowing!  Both sweet potatoes and raw cacao are two of the best foods you can consume for radiant skin!

Sweet Potatoes are high in vitamin A, which is the same nutrient used in those pricey anti-aging retinol creams.  When you consume foods high in vitamin A your body has a more rapid cell turn-over, essentially replenishing your skin from the inside out.  A diet high in vitamin A promotes a brighter complexion and may help with acne prone skin.

Raw Cacao contains many vitamins and minerals, most importantly zinc, iron, copper, chromium and magnesium all of which are important for skin health. However, the high levels of antioxidants is what make this a super skin saver!  The antioxidants in raw cacao fight free radicals and repair damaged skin…say so long to age spots!

You can kind of say this is a cross between a mango margarita and tres leches cake, the best of both worlds for Cinco de Mayo!  A little white flour and white sugar is used in this recipe (eeek!!!), but just a little!  This dessert isn’t overly sweet, but surely is suitable for a fiesta!  The addition of lime scented mango makes for a wonderful warm weather dessert… now, just if it was a little warmer out!  I’m not sure how it is where you live, but it certainly doesn’t feel like May on Cape Cod!

Traditionally Tres Leches Cake is made with 3 types of milk, sweetened condensed milk, evaporated milk and heavy cream. I switched it up for a non-dairy/vegan version by using coconut milk, soy milk and coconut cream.  The base of this dessert, the cake is a standard vegan vanilla cake, which is soaked in the mixture of milk and topped with coconut cream. Mango Lime Tres Leches Cake Recipe

Ingredients

For the cake:

  • 1 cup whole wheat pastry flour Gluten-Free: 1¼ cups of a gluten-free all-purpose flour blend
  • ½ cup all purpose white flour Gluten-Free: ¼ cup of almond flour and ¼ cup of coconut flour
  • ½ cup sugar
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 cup soy milk
  • cup vegetable oil
  • teaspoon pure vanilla extract
  • 2 + ¼ teaspoon apple cider vinegar

For the milk mixture:

  • ½ cup coconut milk separated from can of full-fat coconut milk
  • 1 cup soy milk
  • ½ teaspoon pure almond mixture

For the coconut cream:

  • 1 cup coconut cream separated from can of full-fat coconut milk)
  • 2 tablespoons pure maple syrup

For the topping:

  • 1 mango peeled and diced
  • 1 lime juiced
  • 1 teaspoon lime zest

Instructions

  • Place a can of full-fat coconut milk in the refrigerator for a few hours or overnight. Gently open and scoop out coconut cream, place in a small bowl. Save milk for recipe.

To make cake:

  • Preheat oven to 350 degrees.
  • Lightly oil or spray an 8×8 cake pan with all-natural cooking spray, set aside.
  • In a large bowl, mix together whole wheat pastry flour, all-purpose flour, sugar, baking soda and salt. Make a well and pour in soy milk, oil, vanilla and vinegar. Stir until just combined, do not over mix.
  • Pour batter in pan and bake for 30 minutes or until a toothpick inserted comes out clean. Allow to cool. Use a fork and poke cake to create holes for milk mixture to soak into.

There is no real reason for this post other than sometimes you just need to drink a brownie!

Truth be told, as kids my best friend Kathryn and I would make brownie batter (with eggs!), pour it in a thermos, jump on our bikes and sip it raw…how gross!!!  It’s a wonder we never got sick!

This smoothie brought me back to the good old days 🙂

Since my post on Chickpea Chocolate Chip Cookies was such a hit with both my family and blog readers, I decided to make another batch!

This time, instead of cookies I used the dough to create fudgy brownies!  

These brownies use the same healthy base of chickpeas, but has added antioxidants from cacao powder and omega 3 fatty acids from walnuts!

Let’s take a closer look at what chickpeas have to offer:

Fiber:  Chickpeas are chock full with fiber.  The soluble kind, which is key to lowering cholesterol.  In a recent study published by the Canadian Medical Association Journal eating 1 serving (3/4 cup) per day of beans or legumes lowers LDL levels by 5%.  Chickpeas also contain plant sterols, which are also proven to lower cholesterol levels.

Glucose Stability:  The combination of complex carbs, fiber and protein present in chickpeas keeps blood sugar levels from spiking.  So long hunger headaches!

Iron & Folic Acid:  Chickpeas are a great vegetarian source of iron as well as folic acid.  Both of these nutrients are essential for everyone, but especially important for pregnant women!

  • 1 can 15.5 ounce chickpeas, drained and rinsed
  • ½ cup all natural peanut butter
  • cup pure maple syrup
  • 1 tablespoon vanilla extract
  • ½ teaspoon sea salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • a heaping ¼ cup cacao powder or high-quality cocoa powder
  • cup chopped walnuts + ¼ cup for topping
  • ¼ cup mini-chocolate chips vegan if necessary

Instructions

  • Preheat oven to 350 degrees. Coat a 8×8 baking dish with oil of your choice or cooking spray, set aside.
  • Add chickpeas, peanut butter, maple syrup, vanilla, salt, baking powder, baking soda and cacao powder to a food processor. Blend until creamy. (this may take a few minutes!)
  • Transfer mixture to a bowl and fold in ⅓ cup chopped walnuts.
  • Evenly spread mixture into a greased 8×8 baking dish, top with ¼ cup chopped walnuts and ¼ cup mini-chocolate chips and cook for 20-25 minutes.
  • Brownies are done when a tooth pick inserted comes out clean.
  • Cool, cut and enjoy 🙂

Notes

Top with a little whipped coconut cream and you have a decadent dessert 🙂
Like I said before, no one needs to know they were made with chickpeas 🙂

Vegan Vanilla Cupcakes with Vanilla Cream Frosting

Ohhh, the frosting…

Truth be told, the cupcakes are just a vehicle for the frosting!

Whipped coconut milk with vanilla and a hint of sweetness.  I wouldn’t blame you if you forgot about making the cupcakes all together and just piped the frosting onto a spoon!

The best part about these beauties is that no white flour or white sugar was used!  Whole wheat pastry flour, apple sauce and maple syrup instead!  These would make a healthy treat for your Valentine’s Day honey!  I know I’m jumping the gun a bit, but Valentine’s Day will be here before we know it!  They would even make a great kid’s birthday treat, especially for those with food allergies!

Although I haven’t tried it, I’m guessing an all-purpose gluten-free flour and xanthan gum can replace the whole wheat pastry flour.

If you don’t have whole wheat pastry flour, you can use half white flour and half whole wheat flour instead.  The original recipe can be found here at the Food Network.  The only change I made was to use whole wheat pastry flour instead of white flour and coconut oil instead of canola oil.  The frosting recipe can be found here.  They recommend freezing the opened can of coconut milk. Personally, freezing the coconut cream for an extended amount of time made mixing really difficult!  The first time I made these, my poor hand-held electric mixer had smoke coming out the back!  This time, I just placed the coconut cream in the freezer for around 10 minutes and it worked like a charm!

  • For the cupcakes:
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder

  • ¾ cups pure maple syrup
  • ¼ cup coconut oil melted
  • ¼ cup unsweetened apple sauce
  • 1 teaspoon pure vanilla extract
  • 1 cup soy milk or milk of your choice
  • For the frosting:
  • 1 can full fat coconut milk
  • ½ teaspoon vanilla
  • sweetener of choice I used 2 tablespoons of pure maple syrup. You can use powdered sugar, agave or stevia instead
  • Flaked coconut for garnish optional

Instructions

  • Preheat oven to 350F. Line a cupcake tin with cups and set aside.
  • In a large bowl, sift flour, baking soda, baking powder and salt.
  • In a separate bowl, combine maple syrup, melted coconut oil, apple sauce, vanilla and soy milk.
  • Add wet ingredients to dry ingredients and use an electric mixer to combine. Do not over mix!
  • Fill cupcake cups to ¾ full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool.
  • For the frosting:
  • Do not shake can of coconut milk! Open and scoop out the coconut cream. Transfer to a small bowl and place in the freezer to set. The watery part can be stored in the refrigerator and used later!
  • Using an electric mixer, whip coconut cream with vanilla and sweetener.
  • Frost cupcakes and enjoy 🙂

Keep those ovens turned off for a little while longer!  Here’s another no-bake gluten-free fruit pizza recipe perfect for a hot summer day!

A simple, wholesome and healthy dessert that is a fun fruit filled twist on pizza!

A creamed coconut filling, chocolate crust, fresh fruit and a drizzle of cacao sauce for good measure!

I was inspired from this beautiful dessert pizza and used creamed coconut by Let’s Do…Organic. Can’t find creamed coconut where you live?  Use canned coconut milk and make coconut whipped cream instead! For a raw/grain free crust, substitute raw nuts in place of the oats. You can mix up the fruit topping too… blueberries and bananas would be a splendid combination!

  • 1 cup pitted dates soaked and drained

  • ½ cup old fashioned oats

  • 1 7 oz package creamed coconut softened
  • 1 tablespoon agave or maple syrup

  • 3 kiwis peeled and sliced
  • 1 cup strawberries sliced

  • cacao drizzle

Instructions

  • Soak dates in warm water for 10 minutes and drain. Add dates, pecans, oats, cacao powder, coconut oil and vanilla extract to a food processor and pulse until well combined and a “dough” is formed. Transfer dough to an 8 inch tart pan or pie plate and evenly press down creating a crust. Set aside.
  • Meanwhile, in a medium bowl combine soften creamed coconut, agave and vanilla extract. Using a handheld blender, blend until well combined and smooth. Pour on top of crust. Top with fresh fruit and chocolate chips. Place in refrigerator for 30 minutes to set. Add a drizzle of cacao sauce before serving and enjoy 🙂

Notes

To Make Cacao Sauce:  Whisk together 4 tablespoons of melted coconut oil, 3 tablespoons of raw cacao powder, 2 tablespoons pure maple syrup and a pinch of sea salt.

This vegan milk shake smoothie is pretty darn good, but ‘m pretty sure anything would taste amazing with whipped coconut cream on top!

Peaches…not in season right now, but when they are…stock up and freeze them for later use!

Peaches are loaded with carotenes, flavonoids, lycopene and lutein, which are beneficial in warding off macular degeneration, cancer and heart disease.  They are on the EWG dirty dozen list, so buy organic when possible!

Hemp seeds are added for a healthy dose of omega 3 fatty acids, iron, fiber and calcium…they also lend a slightly nutty flavor!

To make coconut whipped cream, use whole fat coconut milk from a can.  I like using the organic/non-GMO brand Native Forest.

It’s essential that you use whole coconut milk and not low-fat coconut milk!  Place the can in the refrigerator for a few hours or over night…the longer it is refrigerated the better!  Open the can and scoop out the “cream” and reserve the coconut liquid for another use such as smoothies!  Place the cream in a medium sized bowl, add a few tablespoons of sweetener such as maple syrup or agave syrup and a drop of pure vanilla extract if desired.  Using a hand-held mixer, whip until fluffy and peaks form.

Try not to eat the whole bowl!

Use for a decadent topping to desserts, fruit salad or “milk” shakes!
